Beets in a soup? Oh yes!

I ended up with a fridge full of beets after a local farmer's market, so
tried making some beet soup last night! It was lovely! The beets were
candy-cane striped, so the soup looked like pinkish applesauce, but the
flavour was great! suuuuuper easy to make:

1/2 onion, diced
1-2 tsp pureed garlic
2 large beets (about 3/4 lb), sliced thin
1-2 large nugget white potatoes, diced or sliced thin
1 large carrot, diced or sliced thin
2 cups beef broth
1/2 cup cream

Saute the onion in some butter to soften. When soft, add the beets,
potatoes, carrot, garlic. Saute for a few minutes. Pour in the broth and
add some water if you like. You can use chicken broth if you like a
lighter flavour. Cover and simmer until everything is soft. Pour into
your blender / food processor / machine of choice and pulse it until
creamy. Pour it back into the pot and add the cream, salt and pepper to
taste. Yum!
